Ingredients
- 2 cups dried mixed beans, soaked overnight
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can diced tomatoes
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley for garnish
Instructions
- Heat a large soup pot over medium heat. Add olive oil, then sauté the onion, garlic, carrots, and celery until they're softened and the onion is translucent.
- Add the soaked and drained beans to the pot, along with the diced tomatoes, vegetable broth, dried thyme, and bay leaf.
- Bring the soup to a boil. Once boiling, reduce the heat to low and let the soup simmer for about 2 hours, or until the beans are tender. Stir the soup occasionally to prevent the beans from sticking to the bottom of the pot.
- After the beans are cooked, taste the soup and season it with salt and pepper as needed. If you prefer a smoother soup, you can use a blender to puree a portion of it and then mix it back into the pot.
- Serve the soup hot, garnished with fresh parsley.
Notes
For added protein, you can add diced ham or cooked sausage to the soup. If you’re using canned beans, reduce the cooking time to 30 minutes.
