Ingredients

- 1 3/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 6 tbsp unsalted butter
- 3/4 cup dark brown sugar
- 1 large egg
- 1/2 cup molasses
- 2 tsp vanilla extract
Instructions
- In a bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
- In a large bowl, beat the butter, brown sugar, and egg on medium speed until well blended. Add molasses and vanilla; continue to mix until well combined.
- Gradually stir in dry ingredients until blended and smooth. Divide the dough in half and wrap each half in plastic, and let stand at room temperature for at least 2 hours or up to 8 hours.
- Preheat the oven to 375°F. Prepare baking sheets by lining with parchment paper.
- Place one portion of the dough on a lightly floured surface. Roll it out to a 1/4-inch thickness. Use a gingerbread man cookie cutter to cut out the cookies.
- Place the cookies on the prepared baking sheets and bake for 7-10 minutes, or until the edges of the cookies are set.
- Cool on baking sheets for 1-2 minutes before transferring to wire racks to cool completely. Decorate as desired.
Notes
This dough can be prepared ahead and stored in the refrigerator for up to 4 days. Allow it to come to room temperature before rolling out.
