- 1 cucumber
- 2 cloves garlic, minced

- 1 tbsp dill, chopped
- Juice of half a lemon
- Salt and pepper to taste
Instructions
- Peel the cucumber, cut it in half lengthwise, and remove the seeds.
- Grate the cucumber and place it in a sieve lined with cheesecloth over a bowl to drain.
- Press down to squeeze out excess liquid. You can also wrap it in the cheesecloth and squeeze.
- In a separate bowl, combine the Greek yogurt, minced garlic, olive oil, dill, lemon juice, and the drained, grated cucumber. Stir until well combined.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least two hours before serving to allow the flavors to meld together.
