- 2 large russet potatoes
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tbsp chopped green onions
- 2 tbsp cooked and crumbled bacon
- Optional toppings: diced tomatoes, jalapeno slices, diced avocado
Wash and scrub the potatoes thoroughly. Pat them dry with a clean towel.
Pierce each potato multiple times with a fork to allow steam to escape while cooking.
Rub olive oil on the outside of each potato and sprinkle with salt and pepper.
