Ingredients
- 4 cups vegetable broth
- 3 tbsp white miso paste
- 2 tbsp soy sauce

- 2 green onions, thinly sliced
- 1 cup cubed tofu (firm or extra-firm)
- 1 cup chopped spinach or kale
- 1 sheet nori seaweed, cut into thin strips
Instructions
- In a large pot, combine the vegetable broth, miso paste, soy sauce, mirin, sesame oil, and grated ginger. Heat over medium heat, stirring occasionally, until the miso paste dissolves completely.
- Add the mushrooms and green onions to the pot, and simmer for 5 minutes.
- Gently stir in the tofu and spinach (or kale), and continue to simmer for another 5 minutes.
- Just before serving, add the nori seaweed strips to the soup.
- Ladle the soup into bowls and enjoy!
