Ingredients
- 1 pound of boneless, skinless chicken breast, cubed
- 1 cup of sliced carrots
- 1 cup of frozen green peas
- 1/2 cup of sliced celery
- 1/3 cup of butter
- 1/3 cup of chopped onion
- 1/3 cup of all-purpose flour
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 1 3/4 cups of chicken broth
- 2/3 cup of milk
- 2 (9 inch) unbaked pie crusts
Instructions
- Preheat your oven to 425 degrees F (220 degrees C).
- In a skillet over medium heat, cook the chicken, carrots, peas, and celery until the chicken is no longer pink and the vegetables are tender.
- In the same skillet, melt the butter and cook the onions until they're translucent.
- Stir in the flour, salt, and pepper.
- Slowly add in the chicken broth and milk, stirring until the mixture is smooth and thickened.
- Stir in the chicken and vegetable mixture. Remove from heat and set aside.
- Place one pie crust into the bottom of your pie dish.
- Pour the chicken mixture into the pie crust.
- Cover with the second crust, seal the edges, and cut small slits to allow steam to escape.
