Cassava cake with coconut in the blender
First of all, today we are going to show you a delicious and also very traditional recipe, which is the cassava cake with coconut in the blender, in addition to being quick, it is also very practical to make and very requested, being a party favourite. JuneAlso known as manioc cake, this recipe of indigenous origin promises to win the heart (and taste buds) of anyone who tries it.
Ingredients
- 2 lbs of grated cassava (1kg)
- 3 large eggs
- 2 cups of sugar
- 250 ml of coconut milk
- 200 ml of milk
- 3 tbsp of butter or margarine
- 100 grams of grated coconut
Instructions
- First, in a blender, place the eggs, milk, coconut milk, sugar, butter and beat the mixture for approximately 3 minutes and set aside.
- Soon after, separate the already well grated cassava, turn on the blender again and add it little by little so that the mass does not get too heavy in the blender.
- Once this is done, place the dough in a bowl, add the grated coconut and mix well with a spoon until it is very homogeneous.
- Finally, grease a shape, put the dough in the shape and take it to the preheated oven at 180º for approximately 50 minutes (or until it's very golden) and it's ready.
This dough is made without baking powder, but if you want to add yeast, make it during step 3, doing so, your dough will rise more, but it will also be drier. However, if you want a pudding-like cassava cake, we advise you not to put the yeast in the dough.
