Ingredients
For the filling:
- 1 lb ground lamb
- 2 onion, finely chopped
- 2 carrots, diced
- 1 cup frozen peas
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 cup beef broth
- Salt and pepper to taste
For the mashed potatoes:
- 2 lbs potatoes, peeled and quartered
- 4 tablespoons butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Start by preparing the mashed potatoes. Boil the potatoes in a large pot of salted water until tender. Drain and mash them with butter and milk until smooth. Season with salt and pepper.
- In a large skillet, sauté the onion, carrots, and garlic until softened. Add the ground lamb and cook until browned. Drain off excess fat.
- Stir in the tomato paste and beef broth, and bring the mixture to a boil. Reduce heat and simmer until the sauce thickens. Add the peas, season with salt and pepper, and remove from heat.
- Spread the lamb mixture in an even layer in an ovenproof dish. Top with the mashed potatoes, spreading them evenly over the filling.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
Notes
Traditional Shepherd’s Pie uses ground lamb, but you can substitute it with ground beef to make a Cottage Pie if you prefer.
