- 8 units of ripe plantains (approximately 1 kg)
- 3 minced garlic cloves
- 2 units of lemons (only their juice)
- 3 units onions (chopped into rings)
- 1 unit red pepper (sliced into rings)
- 1 unit yellow pepper (sliced into rings)
- 5 units of chopped tomatoes
- 1 strand of olive oil
- 1 unit chopped coriander bunch
- 2 tbsp of chopped parsley
- 2 tbsp of chopped basil
- 1 unit Palm oil (to taste)
- 1 cup of coconut milk
- 1 unit salt to taste
Instructions
- First, cut the plantains in half both vertically and horizontally (they will be cut into 4 pieces), or if you prefer, cut them into slices.
- Soon after, place the plantains in a bowl and pour the lemon juice on top of them.
- Then pour the salt, garlic and mix lightly with a spoon and leave to marinate for approximately 1 hour.
- Done that, in a pan, put the oil and sauté the onion along with the peppers and tomatoes. However, don't forget to add a little salt at the end and stir to accentuate the flavor.
- Soon after, turn off the fire and add the parsley, basil, cilantro and mix them well.
- Finally, place the plantains in another pan and then place the sauté on top of them, add the coconut milk and palm oil.
- Once that's done, cook for another 20 minutes and you're done!
