- 2 tbsp butter
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
- 4 green onions, sliced

Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic. Cook until the onion becomes translucent.
- Add the diced potatoes to the pot. Stir them around until they're well coated with the butter and onions.
