Ingredients
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 carrots, peeled and chopped
- 2 stalks of celery, chopped
- 3 cloves of garlic, minced
- 2 pounds of bone-in, skin-on chicken thighs
- 8 cups of chicken broth
- 1 bay leaf
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 2 cups egg noodles
- 2 tbsp chopped fresh parsley
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic, and cook until vegetables are tender, about 5 minutes.
- Add the chicken thighs, chicken broth, bay leaf, thyme, salt, and pepper to the pot. Bring to a boil.
- Reduce heat to low and let it simmer. Cook until the chicken is tender and falls off the bone, about 1 hour.
- Remove the chicken from the pot and let it cool. Remove and discard the skin and bones, then shred the meat.
- Return the shredded chicken to the pot, and add the egg noodles. Simmer until the noodles are cooked, about 10 minutes.
- Stir in the fresh parsley and adjust seasoning with salt and pepper, if necessary. Serve hot.
